Jayne Street Distilling Co. was conceptualized as a destination for the Hudson Valley. A place that connects the local agriculture with high-end hospitality to create a gastronomical experience for both locals and tourists alike.
Hidden on the corner of Main & Jayne in Florida, NY, the space we occupy is a development almost 20 years in the making. Evolving a barn known romantically to "Floridians" of a certain age as the old Korycki Mechanical Workshop - Jayne Street is a reimagination of the original structure as a distillery and cocktail bar.
Founded by a local family, Jayne Street was a passion project that took many years to create. In collaboration with esteemed lawyers Steven & Jason Spiegel - Jayne Street Distilling Co. is the brain child of Nick Spiegel, a Culinary Institute of America graduate and Certified Sommelier. Together they've formed a business with a vision to provide a unique experience to the Hudson Valley. A sophisticated atmosphere and beverage program, with plenty of growth opportunity through the region and metropolitan area.
As an operation, our main focus is producing spirits specializing in the use of regional Hudson Valley botanicals. Though, we do like to have fun producing other fully New York State-sourced spirits. All the products are distilled on site on from one of two copper pot stills (Buzz & Woody), which reign from The Black Forest of Germany and were hand drummed by the family at Müller Brennereianlagen GmbH. With an aim to match the sheer beauty and craftsmanship of the stills in everything we do.
Adjacent to the distillery, with windows looking in, is our chic cocktail room. Where an everchanging, seasonal menu serves our own spirits, with an array of ingredients prepared in-house. "Cooking with liquid" is a phrase used often by Nick to best describe what he does. As he uses his background in food & beverage to prepare the ingredients for each of the menus - from syrups & juices, to vermouths, bitters, & liqueurs.
